Bolognese Pasta
INGREDIENTS:
2 tbsp olive oil (optional)
1 small onion (yellow or red, cut in small cubes)
2 medium sized carrots (cut in small cubes)
2 stalks celery (cut in small cubes)
2 cups tomato passata
1 can brown lentils (rinsed and drained)
16 oz pasta (e.g. penne, fusilli, farfalle)
1 tsp dried oregano
1 tsp dried thyme
1 tsp dried rosemary
1 tsp garlic powder
1 tsp onion flakes
1 tsp sweet paprika
1 tsp paprika hot
1/2 tsp cumin
2 tbsp tomato paste
2 tsp soy sauce
2 tsp vegetable broth powder
Tip:
Serve dish with steamed green beans or broccoli as a side.
STEPS:
1. In a big frying pan, add olive oil (or sauté with water, if you cook oil free), chopped onion, carrots and celery. Stir and sauté for about 10 min on medium to high heat.
2. Add all dry spices besides vegetable broth powder to pan. Stir in for 2-3 min. Add some water if necessary.
3. Add tomato paste, soy sauce, tomato passata and vegetable broth powder. Let simmer on low heat for 5 min.
4. Cook your pasta of choice as instructed on label.
5. While pasta is cooking, add precooked brown lentils to the sauce pan and stir well. Let simmer for as long as pasta need to cook.
6. Mix pasta with sauce and serve.
