Potato Gratin

INGREDIENTS:


5-7 medium size yellow potatoes

1/2 cup cashew nuts (soaked and drained)
1 medium size zucchini (peeled)
4 tbsp nutritional yeast
1/2 cup water
1/2 tsp salt (herbal, pink or sea salt)








Tip:


Serve dish with steamed green beans or broccoli as a side.

STEPS:


1. Boil a little bit of water and soak cashew nuts in it for approx. 10 min. 

2. Preheat the oven to 350°F.

3. Peel potatoes and cut them into thin slices (best to use a vegetable slicer) and place them in a small casserole dish. 

4. In a high speed blender, add soaked cashew nuts, zucchini, nutritional yeast, water and salt. Blend until everything is has a smooth consistency. 

5. Add sauce to casserole and combine well with potato slices. 

6. Bake for approx. 50-60 min.
