Warming Vegetable Dahl
INGREDIENTS:
2 tbsp olive oil (optional)
1 onion (chopped)
3 carrots (medium size, chopped)
2 stalks celery (chopped)
5 potatoes (medium size, peeled and chopped)
1 head broccoli (chopped)
2 zucchini (medium size, chopped)
1 cup red lentils (washed)
2 tsp vegetable broth powder
2 tsp curry powder (yellow)
1/2 tsp cumin
1 tsp garlic powder
1/4 tsp dried chili flakes
1 tsp sweet paprika
1 tsp paprika hot
1 lemon (optional)
STEPS:
1. In a big pot, add olive oil (replace with water if you cook oil free), chopped onion, carrots and celery. Stir and sauté for 5 min on medium to high heat..
2. Add all spices besides of vegetable broth to pot. Stir in for 1 min.
3. Add 6 cups of water to pot, bring to boil. Add vegetable broth powder, potatoes and red lentils. Let simmer on medium heat for 15 min.
4. Add zucchini and broccoli and cook for another 10 min. on low to medium heat.
5. Add juice of 1 lemon (optional).
