Chili sin Carne
INGREDIENTS:
2 tbsp olive oil (optional)
1 onion (chopped)
1 red or yellow bell pepper (cut in small cubes)
2 medium carrots (cut in small cubes)
1 medium zucchini (cut in small cubes)
8 oz mushrooms (cut in small cubes)
1 jar (25 oz) tomato purée
1 can corn (rinsed)
1 can black, red or white beans (rinsed)
2 tsp vegetable broth powder
1 tsp dried oregano
1 tsp dried thyme
1 tsp dried rosemary
1 tsp garlic powder
1 tsp onion flakes
1 tsp red chili powder
1/2 tsp dried chili flakes
1 tsp sweet paprika
1 tsp paprika hot
Tip:
Garnish your Chili sin Carne with some avocado, lime and cilantro and serve with rice or steamed potatoes!
STEPS:
1. In a big pot, add olive oil (or sauté with water, if you cook oil free), chopped onion and carrots. Stir and sauté for about 5 min on medium to high heat.
2. Add bell pepper and mushrooms and stir for another 5 min.
3. Add zucchini and stir for 2 min.
4. Add all spices besides vegetable broth to pot. Stir in for 2-3 min.
5. Add tomato purée, vegetable broth powder, corn and beans. Let simmer on low heat for 15 min.
6. Serve with some rice or potatoes and garnish with some avocado, lime and cilantro (optional).
