Energy Balls
INGREDIENTS:
10 medjool dates
1/4 cup cold water
1/2 tsp vanilla extract
1 cup ground almonds
1 cup ground oats
Tip:
Feel free to amend this recipe to your liking. Maybe roll the balls in coconut flakes or add some cocoa nibs to them.
STEPS:
1. In a high speed blender, ground oats and almonds until floury. Transfer to a small mixing bowl.
2. Add medjool dates, water and vanilla extract to the blender next. Mix until well combined.
3. Add date mixture to oats and almonds and knead everything together with your hands.
4. Take little portions of the mixture and form small balls using your hands (approx. 12 energy balls).
5. Energy balls can be stored in the fridge for 3-4 days.
