Banoffee Oats
INGREDIENTS:
Oat layer:
1/2 cup rolled or instant oats
2 tbsp chia seeds
1 cup oat milk (or almond, soy)
1 tbsp coconut flakes
Date mix:
3 medjool dates (pitted)
1/2 tsp vanilla extract
1/4 cup walnuts
2 tbsp cold water
Others:
1 banana (cut in slices)
1 small coconut yoghurt or 1/2 cup (all natural, no added sugar)
pinch of coconut flakes
pinch of dark chocolate flakes
Tip:
Banoffee oats are also great overnight oats for work or school the next day!
STEPS:
1. In a bowl, mix oats, chia seeds, coconut flakes and oat milk with a spoon well together. Refrigerate for 30 min. so chia seeds can swell.
2. In a high speed mixer, add dates, vanilla extract, walnuts and water. Blend well until smooth. Refrigerate with oats.
Decoration:
1. In a glass container, first add date mix as bottom layer.
2. Add 3/4 of oat mix on top.
3. Lay banana slices around the glass wall and add remaining oat mix to the middle.
4. Top everything with coconut yoghurt, a pinch of dark chocolate and coconut flakes.

10 min. plus 30 min. refrigerator time
