Carrot Cake Oats
INGREDIENTS:
1/2 cup rolled or instant oats
1 tbsp chia seeds
1 cup oat milk (or almond, soy)
1/3 cup carrot (shredded)
1/4 cup walnuts (chopped)
1/4 cup raisins
1 ripe banana (mashed)
pinch of cinnamon
pinch of cardamon
1 small coconut yoghurt or 1/2 cup (all natural, no added sugar)
1 tbsp maple syrup
Tip:
Carrot cake oats are also great overnight oats for work or school the next day!
STEPS:
1. In a bowl, mix all dry ingredients and oat milk with a spoon well together. Refrigerate for 15-20 min. so chia seeds and oats can swell.
2. Add mashed banana and shredded carrot to the mix.
3. Mix coconut yoghurt and maple syrup in a separate bowl together.
Decoration:
1. In a glass container, add carrot cake oat mix as bottom layer.
2. Top everything with coconut yoghurt, a couple of raisins, walnuts and maybe shredded carrot.

10 min. plus 15-20 min. refrigerator time
