Carrot Salad with a Twist

INGREDIENTS:


3 carrots (medium sized, peeled, grated)
1 beetroot (medium sized, peeled, grated)
1 apple (grated)

2.5 tbsp apple cider vinegar
1.5 tbsp maple syrup
1/4 cup sunflower seeds
1/4 cup water
juice of half a lemon

Tip:


This carrot salad can be enjoyed by itself or as a side dish to a meal.

STEPS:


1. In a high speed blender, add all salad dressing ingredients and mix until well combined.

2. After grating, add carrots, beetroot and apple to a bowl and mix well with salad dressing.
