Asparagus Salad

INGREDIENTS:


2 tbsp olive oil (optional)
8 cups green asparagus (washed, cut in pieces, remove wooden ends)
1 red onion (peeled, cut in slices)
1 mango (peeled, cut in short slices)

1 tbsp "everything bagel" seasoning
Make your own with equal parts:
onion flakes
garlic flakes
poppy seeds
sesame seeds
and add pink or sea salt to your liking

Tip:


This green asparagus salad can be enjoyed by itself or as a side dish to a meal.

STEPS:


1. If you don't have the "everything bagel" seasoning mix at home, I suggest you start with preparing your own first. Mix all ingredients in a little bowl together. (Store in a dry glass container and keep in your seasoning cupboard)

2. In a big frying pan, add olive oil (or sauté with water, if you cook oil free) and sliced onion. Stir and sauté for about 5 min on medium to high heat.

3. Add green asparagus pieces and "everything bagel" seasoning and stir and sauté for about 5-10 min on medium to high heat until steamed but still al dente.

3. Set aside and let cool down for a bit.

4. Meanwhile, prepare mango slices.

5. Mix all ingredients well together.
