Creamy Cucumber Salad
INGREDIENTS:
1 large english (thin-skinned) cucumber (sliced)
1/2 cup fresh chives (cut in small strings)
1/2 cup fresh dill (cut in small strings)
1/2 cup coconut yoghurt (all natural, no added sugar)
1 tbsp maple syrup
1/4 tsp pink salt
juice of half a lemon
Tip:
You could serve this cucumber salad with some steamed potatoes.
STEPS:
1. Thinly slice cucumber in a medium to large bowl with a vegetable slicer.
2. In a small bowl, mix together all salad dressing ingredients.
3. Combine dressing with cucumber and mix well.
