Bulgur Salad

INGREDIENTS:


3/4 cup bulgur
1 1/2 cups water
1 can chickpeas (washed, drained)
1 red bell pepper (washed, cut in cubes)
1 english (thin-skinned) cucumber (washed, cut in cubes)
2 carrots (medium size, peeled, grated)
2 stalks spring onion (washed, cut in slices)

1/2 cup fresh dill (cut in small strings)
1/2 cup coconut yoghurt (all natural, no added sugar)
1 tbsp maple syrup
juice of half a lemon

Tip:


Easily enjoy this Bulgur Salad on the go, at work or in school!

STEPS:


1. Add bulgur and water in a small pot, cover with a lid and prepare according to packaging information (cook for approx. 10 min).

2. Meanwhile, in a large salad bowl, add chickpeas, red bell pepper, cucumber, carrots and spring onion.

3. In a small bowl, mix together all salad dressing ingredients.

4. When bulgur is cooked, set aside and let cool down for approx. 20 min.

5. Add dressing and bulgur to large salad bowl and mix everything well together.
