Tuscan Salad
INGREDIENTS:
1 glass artichokes (approx. 1.5 cups) (drained, cut in cubes)
1 can chickpeas (washed, drained)
5 tomatoes (medium size, washed, cut in cubes)
1/4 cup capers
1/4 red onion (medium size, peeled, cut in cubes)
handful fresh basil (washed, cut in stripes)
handful fresh chives (washed, cut in stripes)
2 tbsp apple cider vinegar
1 tbsp olive oil
1/4 tsp garlic powder
salt + pepper to taste
Tip:
Enjoy this Tuscan Salad as a side dish with potatoes or pasta!
STEPS:
1. Add artichokes, chickpea, tomatoes, capers and onion in a salad bowl.
2. Add all salad dressing ingredients on top and combine well with salad.
