Potato Salad
INGREDIENTS:
5 potatoes (medium size, peeled, cut in quarters)
1 large english (thin-skinned) cucumber (sliced)
10 cherry tomatoes (cut in halves)
1 ripe avocado
1/2 cup coconut yoghurt (all natural, no added sugar)
handful fresh dill (washed, cut in stripes)
juice of 1 lime
1 tbsp argave syrup (or maple syrup)
1/4 tsp salt (herbal, pink or normal sea salt)
Tip:
You can also prep this salad ahead of time and take it to-go for lunch or dinner!
STEPS:
1. In a small pot, add potatoes and a little bit of water. Bring to a boil and steam for approx. 10-15 min. until potatoes are cooked. Drain remaining water and set aside to cool down.
2. Add all salad dressing ingredients into a small bowl and mix well.
3. In a large salad bowl, add cucumber, tomatoes, potatoes (slice quarters thinner if you like), and avocado.
4. Add salad dressing to salad bowl and combine well.
