Homemade Sushi

INGREDIENTS:

1/2 cup uncooked rice (sticky, for instance Thai)
1 cup water
1 tsp apple cider vinegar
2 nori sheets
1/4 large english (thin-skinned) cucumber (cut in stripes)
1/4 red bell pepper (cut in stripes)
1/4 ripe avocado (cut in stripes)

little bowl of cold water
soy sauce (optional)
wasabi paste (optional)

Tip:

You can use any fruits or vegetables to roll up in your homemade sushi!

STEPS:

1. In a small pot, add rice and water and cook according to packaging information.

2. Let cool down (you can prepare the rice ahead of time).

3. Add apple cider vinegar to rice and mix well.

4. On a large clean cutting board, put one nori sheet (smooth side down) and add 1/2 the boiled, cooled down rice to it. Press rice down with a fork or spoon (make sure to only cover the lower half of the nori sheet, leave approx. 10 cm clean on top).

5. Put some of the cucumber, bell pepper and avocado stripes on the rice covered part of the nori sheet.

6. With both hands, roll up the three ingredients with the sheet into a roll until only the clean part of the nori sheet is left (make sure to roll it up fairly tight).

7. Dip one hand into the bowl of cold water and wet the clean part of the nori sheet and afterwards roll the sheet up until the end.

8. With a very sharp knife, cut the nori roll into 6-8 little pieces.

9. Serve with soy sauce and/or wasabi paste if you like.
