Curried Couscous
INGREDIENTS:
1 cup couscous (uncooked)
2 cups boiling hot water
2 tsp vegetable broth powder
2 tbsp olive oil (optional)
1 head broccoli (break into small pieces)
2 small red bell peppers (cut into small cubes)
3 medium carrots (cut into small cubes)
2 stalks spring onions (cut in small slices)
2 cups frozen peas
1/4 tsp chili powder
1/2 tsp dried cilandro
1/2 tsp cumin
1 1/2 tsp yellow curry powder
salt + black pepper to taste
Tip:
Store leftovers in fridge for approx. 3 days.
STEPS:
1. Add uncooked couscous to a medium sized bowl. Add vegetable broth powder and stir well. Afterwards add boiling hot water and let sit for at least 5 minutes.
2. In a big frying pan, add olive oil (or sauté with water, if you cook oil free), red bell pepper and carrots. Stir and sauté for about 8 min. on medium to high heat.
3. Add spices to frying pan and stir well with bell pepper and carrots. If necessary, add some water.
4. Add broccoli and cover with a lit to steam vegetables for about 5 min.
5. Add frozen peas and spring onions and stir well with other ingredients. Cover again with lit and let simmer on low heat for about 5 min.
6. Finally, add couscous and stir everything until well combined.
7. Add salt and black pepper to taste.
